Meatless Monday: Loaded Sweet Potatoes

I think I'm a little late to the stuffed sweet potato game but better late than never, right? While I don't think I could ever fully commit to a meat-free lifestyle, I do like taking at least one day a week to eat vegetarian. I was a vegetarian for a couple of years when I was a teenager and back then, blogging wasn't a thing so finding tasty meatless meals was tough. Add a nut allergy to the mix and suddenly options were very limited. Nowadays, there are tons of meat substitutes, vegetarian food bloggers, and entire organizations centered around eating meat free (hi, Meatless Monday!) so it isn't hard to stick to a meat free eating plan.

Get to the point, right? Here's a filling, vegetarian meal for your meatless needs.

Loaded Sweet Potatoes

Serves: 4 | SmartPoints: 8
  • 4 medium sweet potatoes
  • 1/2 cup fat free Greek yogurt
  • 1 tbsp taco seasoning (you can easily make your own if you don't have it!)
  • 1 tsp olive oil
  • 1 large bell pepper (color of your choosing, I like red), diced
  • 1 small red onion, diced
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 1/3 cups canned black beans, rinsed and drained
  • 1/2 cup jarred salsa
  • 1/2 cup reduced fat shredded cheese
  • 1/4 cup chopped scallions
  1. Bake the sweet potatoes according to your favorite method - that could be in the microwave or in the oven. We don't have a microwave so it's the oven for me!
  2. Combine yogurt and taco seasoning in a small bowl, mixing well. Set aside.
  3. While the sweet potatoes are cooking, heat oil in a medium pot over medium heat. Add the pepper, onion, chili powder, paprika and cumin, cooking until the onions have caramelized. Add black beans, stirring to combine and heat through. 
  4. Slice the potatoes lengthwise down the middle and evenly distribute the bean mixture between them, about 1/3 cup for each. Top with 2 tbsp each of shredded cheese, 2 tbsp Greek yogurt, 2 tbsp salsa and garnish with scallions.
