German Apple Cake

Ever have apples lying around, starting to get soft and squishy? Before automatically tossing them into the garbage, why not dice them up into a German apple cake! This thick, chewy cake is easy to throw together and uses ingredients that are most likely in your pantry already, so no outsourcing for anything weird.

German Apple Cake
Serves  12
Ingredients:
  • 3 eggs
  • 1 cup vegetable oil
  • 2 1/2 cups flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 1/2 tsp salt
  • 1 tbsp cinnamon
  • 1 tsp vanilla
  • 4 cups peeled, cored, and chopped apples
    • I used Gala
Directions:
Preheat the oven to 350f. In a large bowl, combine the all the ingredients except the apples. Mix thoroughly to combine; it will become a thick batter.

Peel, core, and chop the apples. I usually like to leave the skin on but these apples were pretty bruised up.

Add the apples into the mixed batter and keep stirring until combined (elbow grease!). Spray a 9x13 baking dish with cooking spray and evenly spread out the mixture.

Bake at 350f for 50 minutes. Let cool and slice into 12 pieces. Great on its own, for breakfast on the go, or topped with whipped cream or vanilla ice cream!
