Meatless Monday: French Onion Soup

Despite the weather finally getting warmer, I still crave soup - especially when it's full of onions and covered in cheese. French Onion Soup is one of those dishes that I never order in a restaurant but always want. It just tastes better when it's made at home and smells up your apartment with that deliciously pungent scent of onions.

This version is lightened up by using reduced-sodium chicken broth instead of the usual beef broth but that doesn't mean it's lightened up on flavor! Caramelizing the onions for two hours deepens the savory sweetness of the yellow onions and the creamy cheese on top finishes off the soup perfectly.

Recipe modified from Weight Watchers
Serves 4, PointsPlus: 6, Serving Size: 1 cup, 1 bread slice, 1/4 cup cheese
  • 1 tbsp olive oil
  • 2 lbs uncooked onions, thinly sliced (half moons)
  • 2 cups reduced-sodium chicken broth
  • 1 1/2 tsp Worcestershire sauce
  • Freshly ground black pepper and salt, to taste
  • 4 oz. French baguette, sliced
  • 1 cup low-fat shredded cheese

Heat olive oil in a large Dutch oven on medium heat, swirling to coat the bottom of the pot. Add the sliced onions and season with salt and pepper

Sauté for about 10 minutes then reduce heat to low

Cook onions, stirring frequently, for 1.5 - 2 hours, or until onions are browned and have reduced in size

After browning, add the broth and Worcestershire and bring to a simmer, stirring occasionally.

Preheat oven to 450f. Place 4 ovenproof soup bowls on a baking sheet. Ladle the soup into the bowls, topping each with a slice of bread and 1/4 cup of cheese. Bake until the cheese melts, about 5 minutes. Serve immediately!
