Fiesta Friday is possibly my favorite night of the week. I love anything with fresh cilantro and avocados and these beef and bean soft tacos are quick and easy and fun to assemble! Sure, there's alot of cleanup when you put toppings in little hedgehog measuring cups but the food is so much cuter that way. 

Beef and Bean Soft Tacos
Recipe adapted from Weight Watchers
Serves: 6, PointsPlus: 8, Serving Size: 2 tacos
  • 1 lb lean flank steak, trimmed of fat
    • 1 tbsp chili powder, salt and pepper for seasoning
  • 1 tbsp olive oil
  • 1/2 cup reduced-sodium canned black beans, rinsed and drained
  • 1 jar fat-free salsa (plus more for serving, if desired)
  • 12 medium flour tortillas
  • Toppings:
    • Fat-free sour cream
    • Fresh diced tomatoes
    • Lettuce
    • Smashed avocado
    • Lime wedges
    • Fat-free shredded cheese
  • Season the flank steak with chili powder, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Cook the steak to your desired doneness (I like mine on the rare side). Let the steak rest before slicing into 1/2 inch strips.
  • Heat a large saucepan over medium heat and add the black beans and salsa. Bring to a simmer and add the sliced steak, heating through. 
  • Evenly divide the beef and bean mixture among the tortillas and assemble the tacos as you'd like! Dinner in a flash.
