Citrus-Marinated Chicken Thighs

Citrus-marinated chicken thighs
Bon Appétit says this is "aggressively marinated" and it is and it is DELICIOUS. Everything works together in this dish. I think chicken thighs are underrated but this dark meat goes perfectly with bright, tart acids like lime and orange. This whole meal came together quickly and easily and was low on points but high on flavor.

Citrus-Marinated Chicken Thighs
Recipe modified slightly from Bon Appétit
Serves 4
  • 1 bunch scallions, thinly sliced
  • 1/2 bunch cilantro
  • 2 garlic cloves, chopped
  • 1 tsp lime zest
  • 1 tsp orange zest
  • 1/4 cup lime juice
  • 1/4 cup orange juice
  • 1/4 cup reduced-sodium soy sauce
  • 2 tbsp vegetable oil
  • 1 tbsp kosher salt
  • 2 pounds chicken thighs
  • Slice the scallions and set aside 1/4 cup for later use
  • Pulse cilantro, garlic, citrus zests and juices, soy sauce, oil, salt, and remaining scallions in a food processor until a coarse purée forms
  • Set aside 1/4 cup of the marinade, adding the rest to a large resealable bag
  • Add the chicken thighs to the bag, turning to coat, and chill for at least 20 minutes.
  • Preheat the broiler
  • Place chicken on a foil-lined baking sheet
    • Discard remaining marinade
  • Broil until chicken is lightly browned, about 5 minutes
  • Turn, continuing to broil until chicken is cooked through and a thermometer injected into the thickest part of the thigh reads 165f, about 12-15 minutes
  • Top chicken with rest of marinade, reserved scallions, and garnish with cilantro
  • Serve with 1/4 cup brown rice (4 pts) and 1/2 cup edamame (3 pts)
